Miso soup (味噌汁, Miso Shiru) is one of the best known and most popular dishes in Japanese cuisine.

Ingredients and Preparation

Making miso soup is easy and requires only a few basic ingredients:

  • Miso paste (red, white or mixed): The base of the soup.
  • Dashi : A broth traditionally made from kombu (seaweed) and katsuobushi (dried bonito flakes).
  • Tofu : Cubes of soft or medium-firm tofu make a light, protein-rich addition.
  • Wakame seaweed : Dried or fresh seaweed that adds texture and nutrients to the soup.
  • Spring onions : Finely chopped spring onions give the miso soup a fresh note and round off the taste.
